Wine and Food

A meal without wine is like a day without sun!

There is a harmony between wine and food, which we also know as Pairing.

These are 3 basic recommendations of marriage, but of course they are not written in stone, but rather serve as a basic and simple guide.

  1. The recommendation by color
    • Red wines: Red or dark meats (beef, lamb, hunting, etc.), pasta with tomato, light and hard cheeses, prosciutto, Serrano hm, cold meats.
    • White wines: Fish, seafood, white meats (poultry, pork, etc.), pasta with cream or pesto, strong and soft cheeses, mouths and entrances.
  2. Weight recommendation
    • Similar weights of wine and plate
  3. The recommendation of the dominant flavor
    • The existence of a dominant flavor can be decisive for the choice of wine. For example, to accompany a dish of white fish with an intense flavor sauce, such as Dijon mustard, the reference is not the fish but the dominant flavor of the sauce. In this case you can perfectly accompany this dish with a red wine.

There are foods like duck and goose that harmonize well with red wines and white wines.

Traditionally desserts are accompanied by sweet white wines or fortified wines such as Oporto, Malaga or Marsala.

The cuisine and wine of a culture usually evolve together. It is no coincidence that the traditional food of a region harmonizes with the wine of the same region.

Carmelo Rodero

Coming from a family of winemakers from the riverside town of Pedrosa de Duero, Burgos, Carmelo Rodero belongs to the fourth generation of winemakers. His great-grandparents made the wine in the classic and old wineries, until the Pedrosa de Duero Wine Cooperative was founded, of which his grandparents were founders.

Continuing with this trajectory Carmelo RODERO began cultivating the vines belonging to his family for a few years, later decided to disassociate himself from it, and with 50 hectares of vineyard, he began selling his grapes to the mythical Vega Sicilia Winery for 14 years.

In 1990 he started his own career. Bet on the future and quality knowing that the base of a great wine goes through some good grapes, so Bodegas Rodero is proud that since its first production in 1991, all its wines have been awarded at the most important fairs and tastings , both national and international, serving as a contrast and recognition of its quality.

Carmelo Rodero, supported by his wife Elena, will continue his entrepreneurial action thanks to the incorporation of his daughters Beatriz and María very involved in the project. Beatriz, her eldest daughter, Bachelor of Agricultural Engineering (specializing in viticulture) and with higher studies of oenology in Bordeaux.

 

 

Alejandro Vigil was recognized as Winemaker of the year by Tim Atkin

The outstanding winemaker Alejandro Vigil added a new and outstanding medal for his career. He was chosen as the “Winemaker of the Year” for the Special Report Argentina 2019 of wine critic Tim Atkin.


Atkin was in Argentina during the month of February this year, when he tasted 1586 wines made in our country. Based on this experience, the English critic makes an important report, which is one of the most prominent in the world. The wines tasted in each region are qualified and special mentions are also made for the professionals of the environment. The highest award given is that of “Winemaker of the Year”, which was received by Vigil. In addition, a wine made by Alejandro (Catena Zapata – Adrianna Vineyard White Bones Chardonnay 2017) obtained 98 points and was the best rated wine in the report.

 

“The recognition of Tim Atkin is highly valued for us. Especially since he has been visiting Argentina for 20 years now and therefore knows our areas perfectly. For me

having received this award was a big surprise and it brought me great joy. On the other hand, it seems to me to be a recognition of the way we work in Mendoza today. Today the terroir is above people. While this is a personalized award and it excites me, I think it is for a whole work group. Which comes thinking and working as a result of viticulture and understanding the differences according to climate and soil. It is a deep job ”

And he adds: “The first thing I just thought about was the people around me. Mainly my family and the friends who are always close, who are the ones who support and push me. Also in the Catena family, that has been totally generous with me. With them I have been able to develop professionally and personally. Especially because of a very close bond with Doctor Nicolás Catena, a person with whom I speak and daily review my life.

A new achievement of Vigil that from here we celebrate. Santé!
